Curried Chicken Salad with Bell Peppers

Ingredients

4 tbsp coconut cream
110 g chicken breast
2 tbsp coconut oil / olive oil
1 red / green bell pepper, diced into small pieces
½ .cucumber, diced into small cubes (optional)
1 tbsp pumpkin seeds (optional)
1 tbsp blueberries (optional)
1 pinch salt
1 pinch black pepper
1 pinch curry powder
1 tsp dhaniya / cilantro, finely chopped

PREPARATIONS

Preheat a skillet over medium high heat and cook the diced chicken in the coconut oil until the chicken pieces are golden brown and fully cooked.


Place the cooked chicken pieces into a bowl and let cool for a few minutes. Add into the bowl the diced bell pepper, cucumber, pumpkin seeds, blueberries.Spice it up with black pepper, salt, cilantro and curry powder. Add the coconut cream/ coconut milk and mix everything well.


Serve with lettuce leaves or by itself.
